Goodbye Summer ... Hello September

The mornings are getting noticeably chillier and outside there is a definite autumnal smell in the air that wasn’t there a week ago. The need to open all the windows and doors in an attempt to encourage a cool breeze flow through the house has now passed and there is an instinctive urge to cosy up in the evenings.

September is usually a sunny month which means there is still time for lunches in the garden and the occasional dinner too. It’s so relaxing to light the fire or chiminea and sit outdoors even after it has gone dark with blankets around our knees and just a few candles for light.

Better make the most of it - by the first week of October, the colder weather will be here to stay for a good while yet and thoughts of the summer will be well and truly wrapped up for another year.

Embracing Autumn This Bonfire Night

With nights drawing in, and a nip of cold in the air, it’s clear that we are no longer in summer, and are well and truly in autumn. And although Halloween seems so enticing, with promises of sweets and thrills, there’s nothing that promises cosiness and warmth quite like Bonfire night. 

There are many ways to celebrate Bonfire night – whether its going to a public display, or staying at home with a few friends. But there’s always something you can do to make the evening as homely and warm as it should be. 

Getting in the mood is very simple, all it takes is a few blankets and hot drinks. These are easy to do no matter what your plans – a thermos full of hot chocolate (maybe even mulled wine if you’re keen) can be taken to public displays and take the edge off a night which can get a little bit chilly. Our Luxury Toasting Boxes are also a great idea to ready you for the evening ahead, especially if you’re hosting. They can be used inside or outside and are a really fun, cool thing to do. The great range of flavours also means that they can be enjoyed by you and all your friends. 

The most important thing though, as always, is to stay safe and warm. Lots of layers and tasty treats – think toffee apples, toasted marshmallows and jacket potatoes – and you’re sure to have a great night.

It was such a pleasure to be invited to take part in this photo shoot with some of the biggest names in the wedding industry in the south of England. And So To Wed is a website which inspires bespoke brides looking for handmade and unique inspiration and ideas for their wedding. We love the month of June. Mainly because so many couples get married at this time of the year. There is so much to plan and arrange. Once your venue has been booked, it's pretty much plain sailing. The problem is the range of choice available to couples. We offer a range of delicious marshmallow treats for your guests. Our marshmallow favours are available as cubes or in heart shapes. We offer them in a range of flavours and we are completely open to suggestions if there is a colour or flavour that you would like, just contact us to discuss.

How do you plan the perfect wedding? Fortunately there is so much online help on hand through the internet. One excellent recommendation is Hitched who curate a list of wedding suppliers including luxury wedding venues, dress makers, caterers, cake makers and marshmallow creators, of course! Their website it helpful and provides plenty of tips on how to go about making your day extra special. After all, it's all about creating the perfect day for you and your partner.

Valentine's Marshmallow Hearts

With Valentine's Day less than a month away, we wanted to create a delicious marshmallow treat for you and your loved ones.  Our marshmallows are all handmade using the finest ingredients. We lovingly hand-tie each pack with a red taffeta ribbon, ready for you to give as a gift.

The marshmallows are flavoured with strawberries and champagne to add that extra touch of elegance and luxury. They are individually cut into heart shapes each measuring approx 4cm across. There are approx 14 marshmallow hearts in each pack. Total weight is about 100g. 

We can offer a personalised gift tag at no extra cost - just fill out the appropriate box while placing your order.

Make Your Own Marshmallows!

We hope that you have enjoyed following our daily Instagram and Facebook on how to Make Your Own Marshmallows. It is a question we are asked a lot by our customers. If you have a spare afternoon, it's definitely worth getting a bit sticky and covered in icing sugar (don't wear black) or invite a friend over or get the kids involved. The recipe below is for vanilla flavour but you can make any flavour you fancy really. Get creative!

First of all, gather your ingredients together. To make approximately 30-40 marshmallows, you will need:


500g Caster Sugar

180g Glucose Syrup (Dr Oetker's is best)

35g Gelatine - pork or gelatine

1 spoonful of Nielsen-Massey Vanilla Bean Paste

500ml Water

You will also need a roasting tin measuring approx 250 x 180mm with a depth of at least 3cm. Coat lightly with oil and douse with lots of cornflour and icing sugar (50:50 ratio).

First of all, place the gelatine in the mixer bowl and add 120ml water. Next, place caster sugar and glucose syrup and 200ml water in a saucepan, turn on full heat and stir well. Heat to 130 degrees celsius - you will need a sugar thermometer for this - and when it reaches the correct temperature, switch off.

Carefully pour the molten sugars into the mixer bowl to join the gelatine and water. Start to beat very slowly at first for 2-3 minutes - careful, it is very hot and may splash. Then turn the speed up to medium allowing the mixture to cool as it beats. Finally whisk on full speed to reach maximum volume. 

The mixture will cool and turn white (it will look like meringue) and it will grow in size 3-4 times. If it becomes very stiff (like stretched out chewing gum) add some more water 10ml at a time to loosen. 

The mixture should be firm but pourable. Pour the marshmallow mixture into the greased tin. Cover and leave to set overnight. 

Once the marshmallow has set, turn it out onto a surface well-doused with cornflour and icing sugar. Cut into cubes or use a cookie cutter to make your own unique shapes. They are best eaten as fresh as possible but can be stored at room temperature in an airtight container for up to 4 weeks.

A huge thank you goes to Sofitel and to our local independent stockists for believing in us and supporting our growing business. Finally thank you to our family members who have helped pack countless marshmallow boxes, have got up extra early on many a Saturday morning to set up our stall - you have been a shoulder to lean on on many a late - can't get this finished in time - night as well as all-round excellent company on many a cold, rainy stall.

We look forward to 2017, to taking small but significant steps forward and to spreading the LMG marshmallow word further and wider.

Gluten--Free Carrot & Courgette Cake Recipe


240g light brown muscovado sugar

240g gluten-free flour

120g grated carrots

120g grated courgettes

zest of one orange

100g pecan nuts chopped roughly

1 tspn cinnamon

1/4 tspn ground nutmeg

1/2 tspn ground ginger

pinch of sea salt

150g sunflower oil

3 medium eggs

For the Frosting

100g mascarpone cheese

180g cream cheese

100g icing sugar

2 tspns of orange juice


Heat the oven to gas mark 4 or elec 180 degrees celcius

Grease and line the base of a 18cm loose bottomed baking tin


Sieve the dry ingredients into a large bowl. Add the carrot and courgette and mix well. Then add the oil, eggs, juice and zest and mix thoroughly. Pour the mixture into prepared baking tin. Put in oven for 50 mins.  Ensure the cake is ready by testing a skewer comes out clean. Leave the cake to cool for 5 mins then gently release the cake onto a cooling rack. 

Make the frosting by mixing the soft cheeses in a stand mixer on medium for 2 mins, then add the icing sugar and orange juice. Mix for a further minute and allow to cool for an hour in the fridge or for 20 mins in the freezer. As long as the cake has cooled completely, decorate the top of the cake with the frosting.

Planning for Christmas!

It's been a busy week in the marshmallow kitchens with the first order safely delivered for a major hotel client. Sit down, cup of tea (and a marshmallow or two) and off we go! We had another summer wedding to cater for - 75 marshmallow finger packs tied in silk ribbon for each of the guests. On top of that, the online sales continue to grow which is great news. We are delighted to be a regular fixture at Venn St market in Clapham every Saturday.

We are now planning for September and beyond, even as far as Christmas. We will be at Putney Market every Saturday in September - so do come and say hello to us! We are planning our seasonal recipes for the Festive season and will have more news on that in coming posts.

Broadway Market here we come ...!

We are really happy to announce that you can now find our marshmallows and some of our cheery LMG team at the awesome Broadway Market on Saturdays from 10am through to 4pm. Head to the Schoolyard and we will be easy to find. Lots of the usual freebie tasting sessions and masses of fluffy marshmallows are waiting for you!

Whatever the Weather...

It's been another busy week in the marshmallow kitchen. The weather has been rather temperamental to say the least and all of the BBQs we promised ourselves have been put on hold for sunnier days. We have been selling lots of toasted marshmallow packs at our markets which offer the option of toasting our delicious marshmallows outside and in! If you can't make it to either West Dulwich or Venn St in Clapham on Saturday, email me and we will get a toasting pack whisked out to you in the post. It comes with a variety of 3 flavours of marshmallow and tastes delicious with fruit.

Father's Day in our house started with homemade pancakes, fresh raspberries and lots of marshmallows of course. We tried various experiments toasting the marshmallows first or just letting them melt on contact with the hot pancakes. We had a very happy Father's Day breakfast! We hope that all the Dads out there had a lovely day and those Dads who are no longer with us were especially missed. 

Despite the weather, we will be at the Craft Beer Co Summer Garden Party this coming Saturday 25th June 12-5pm with our safety fire pit and lots of delicious marshmallows to toast and eat. Marshmallows go down very well with a tasty beer or two so come along and join us for lots of fun. Check out Instagram and Facebook for more details. We will still be at Venn St and West Dulwich, so come along and say hello. We will have our Violet flavour marshmallows there for a limited period.

Busy Week in the Kitchen!

It's been a busy week in the marshmallow kitchen. Since our feature on Channel4, we have had a lot of orders and interest which is great news. We have had to bite the bullet and buy our first industrial sized mixer as our Kitchen Aid was struggling to keep up! We are very proud of it.

Thank you once again for all the positive feedback on social media - it really means a lot to us. We also wanted to mention the other small businesses and startups who like ourselves are working 7 days a week to develop our businesses - it's so important to support each other as we grow. Wishing you a bit of a rest on a Sunday, if possible :)

Lastly, the weather hasn't been exactly brilliant this week, but nothing is stopping us from toasting marshmallows over the fire. We've waited all year for this. We now have toasting packs with mega supplies of vanilla and chocolate marshmallows, skewers and a gentle mini brazier so that you can carry on toasting indoors even if the weather turns a little nasty outside. We've sold lots at Venn St Market and would love to hear your feedback if you have bought some. Coming soon to the Shop page of our website. Extraordinary Week in the Kitchen

This has been the the most amazing week. First Wedding Ideas magazine, one of the most respected and widely read wedding publications, contacted us as they wanted to run a feature on our marshmallows for  their next issue. We then received marshmallow orders from several well-known companies asking for us to prepare corporate gifts for some of their most exclusive clients. Then finally, Channel 4 contacted us to say that they wanted to feature our Elderflower & Champagne marshmallows on their Sunday Brunch programme - we were so proud to see our delicious guimauves on the TV! #marshmallows #weddingideas #channel4

We brought our marshmallows to Venn Street Market on Saturday and we were feeling a little nervous to say the least as it was our first time. However, we needn't have worried as everyone was so kind and welcoming to us and it couldn't have gone better. A big thank you to all of our amazing customers for supporting us and to our fellow stall holders for putting us at our ease. We look forward to seeing you next Saturday and spreading the mallowy word!
